Ingredients:

  • 1 whole chicken
  • 1 lb. small potatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp dried thyme

Instructions:

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. In a small bowl, mix together the olive oil, salt, pepper, paprika, garlic powder, and thyme.
  3. Rinse and pat dry the chicken. Rub the mixture all over the chicken, making sure to coat it evenly.
  4. Cut the potatoes into small chunks and toss them in the remaining seasoning mixture.
  5. Place the chicken in a roasting pan and surround it with the potatoes.
  6. Roast the chicken and potatoes for about 45 minutes to 1 hour, or until the internal temperature of the chicken reaches 165 degrees F (74 degrees C) and the potatoes are tender.
  7. Let the chicken rest for a few minutes before carving and serving with the roasted potatoes.
