parsley basil pesto recipe


Basil Pesto Recipe:

 Ingredients:

1. 2 cups fresh basil leaves, packed

2. 1/2 cup freshly grated Parmesan-Reggiano or Romano cheese

3. 1/2 cup extra-virgin olive oil

4. 1/3 cup pine nuts or walnuts

5. 3 medium garlic cloves, minced

6. Salt and freshly ground black pepper, to taste

Instructions:

1. Toast the pine nuts or walnuts in a small skillet over medium heat until lightly golden brown and fragrant, about 3-5 minutes. Let cool.

2. In a food processor, pulse the basil leaves and garlic until coarsely chopped.

3. Add the toasted nuts and pulse a few times more.

4. Add the grated cheese and pulse again until everything is finely chopped.

5. While the food processor is running, slowly pour the olive oil through the feed tube until the mixture is well combined and forms a smooth paste.

6. Add salt and black pepper to taste.

7. Store the pesto in an airtight container in the refrigerator for up to a week or freeze for later use.
