 Elote Recipe:

Ingredients:


1. 4 ears of fresh corn, husked
2. 1/4 cup mayonnaise
3. 1/4 cup sour cream
4. 1/2 cup crumbled cotija cheese
5. 1/2 teaspoon chili powder
6. 1/4 teaspoon smoked paprika
7. 1/4 teaspoon garlic powder
8. 1/4 teaspoon salt
9. 1/4 cup chopped fresh cilantro
10. 1 lime, cut into wedges

Instructions:

1. Preheat a grill or grill pan over medium-high heat.

2. Grill the corn, turning occasionally, until charred in spots and cooked through, about 10-12 minutes.

3. In a small mixing bowl, whisk together the mayonnaise, sour cream, cotija cheese, chili powder, smoked paprika, garlic powder, and salt.

4. When the corn is done, use a brush to coat each ear of corn with the mayonnaise mixture.
Sprinkle the chopped cilantro over the corn.

5. Serve the elote immediately, with lime wedges on the side for squeezing over the top.

Note: If you don't have a grill, you can also roast the corn in the oven at 400°F for 25-30 minutes, turning occasionally, until tender and lightly charred.
