sushi bake recipe with salmon

 


Here's a recipe for sushi bake, a casserole dish that combines the flavors of sushi with a baked casserole:

Ingredients:

  • 2 cups sushi rice
  • 2 cups water
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 pound raw sushi-grade fish (such as salmon or tuna), diced
  • 1/2 cup mayonnaise
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 cloves of garlic, minced
  • 2 green onions, thinly sliced
  • 1/2 cup diced cucumber
  • 1/2 cup diced avocado
  • 1/4 cup diced red onion
  • 1/4 cup diced red bell pepper
  • 2 tablespoons toasted sesame seeds
  • 1 sheet of nori, thinly sliced
  • Sriracha sauce or wasabi, for serving (optional)

Instructions:

  1. Rinse the sushi rice in water until the water runs clear. In a saucepan, combine the rice and water and bring to a boil. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the water is absorbed and the rice is tender.
  2. Remove the pan from heat and let it sit, covered, for 10 minutes. Fluff the rice with a fork and transfer it to a large mixing bowl.
  3. In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar dissolves. Pour the mixture over the rice and toss until the rice is evenly coated.
  4. In a small mixing bowl, combine the mayonnaise, soy sauce, sesame oil, and minced garlic. Mix well.
  5. Preheat the oven to 350 degrees F. Grease a 9x13 inch baking dish with cooking spray.
  6. In the prepared baking dish, layer half of the rice mixture, followed by half of the diced fish, green onions, cucumber, avocado, red onion, red bell pepper, and sesame seeds. Spread half of the mayonnaise mixture over the top.
  7. Repeat the layers, ending with a final layer of rice. Spread the remaining mayonnaise mixture over the top.
  8. Bake the sushi bake for 20-25 minutes, or until the top is golden brown and the fish is cooked through.
  9. Remove the sushi bake from the oven and top with thinly sliced nori.
  10. Serve the sushi bake with sriracha sauce or wasabi, if desired.
You can use any variety of fish and vegetables as per your preference. Also, Sushi bake can be stored in an airtight container in the refrigerator for up to 3 days
