Chicken Korma Recipe:

Ingredients:

  • 1.5 lbs boneless chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 tablespoons ghee or oil
  • 2 tablespoons cashews
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 cup tomato puree
  • 1 cup heavy cream
  • 2 tablespoons fresh cilantro, chopped

Instructions:

  1. Heat the ghee or oil in a large saucepan over medium heat.
  2. Add the chopped onion and sauté until golden brown.
  3. Add the minced garlic and grated ginger and continue to sauté for another minute.
  4. In a separate pan, roast the cumin and coriander seeds until fragrant.
  5. Add the roasted seeds, garam masala, turmeric powder, paprika, and salt to the saucepan with the onion mixture and stir to combine.
  6. Add the chicken pieces to the saucepan and cook until they are browned on all sides.
  7. Add the tomato puree and cook for 5-7 minutes, stirring occasionally.
  8. In a separate pan, grind the cashews into a fine powder.
  9. Add the ground cashews to the saucepan with the chicken mixture and stir to combine.
  10. Stir in the heavy cream and bring the mixture to a simmer.
  11. Reduce the heat to low, cover the saucepan, and cook for 10-15 minutes, or until the chicken is fully cooked and tender.
  12. Serve hot and garnish with fresh cilantro. Enjoy!
