cheesy potato soup recipe


 

Ingredients:

  • 4 medium sized potatoes, peeled and diced
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Optional toppings: chopped green onions, shredded cheddar cheese, crumbled bacon

Instructions: I. Preparation

  • Chop the onion and mince the garlic.
  • Peel and dice the potatoes.

II. Cooking the Soup

  1. In a large pot, melt the butter over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the diced potatoes to the pot and pour in the broth.
  4. Bring to a boil, then reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.

III. Blending the Soup

  1. Remove the pot from heat and use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend until smooth, then return it to the pot.

IV. Finishing the Soup

  1. Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is heated through.
  2. Season with salt and pepper to taste.

V. Serving

  1. Serve the soup hot with desired toppings.
