cheesy potato soup recipe
Ingredients:
- 4 medium sized potatoes, peeled and diced
- 2 tablespoons butter
- 1 small onion, chopped
- 3 cloves garlic, minced
- 3 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Optional toppings: chopped green onions, shredded cheddar cheese, crumbled bacon
Instructions:
I. Preparation
- Chop the onion and mince the garlic.
- Peel and dice the potatoes.
II. Cooking the Soup
- In a large pot, melt the butter over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the diced potatoes to the pot and pour in the broth.
- Bring to a boil, then reduce heat and let simmer until the potatoes are tender, about 15-20 minutes.
III. Blending the Soup
- Remove the pot from heat and use an immersion blender to blend the soup until smooth.
Alternatively, you can transfer the soup to a blender and blend until smooth, then return it to the pot.
IV. Finishing the Soup
- Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is heated through.
- Season with salt and pepper to taste.
V. Serving
- Serve the soup hot with desired toppings.
