Instructions:
I. Preparation
Chop the onion and mince the garlic.
Peel and dice the potatoes.
II. Cooking the Soup
In a large pot, melt the butter over medium heat.

III. Blending the Soup
Remove the pot from heat and use an immersion blender to blend the soup until smooth.
Alternatively, you can transfer the soup to a blender and blend until smooth, then return it to the pot.
IV. Finishing the Soup
Stir in the heavy cream and shredded cheddar cheese until the cheese is melted and the soup is heated through.
