Ingredients:
- 6 medium sized onions, thinly sliced
- 3 cloves garlic, minced
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 teaspoons dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup dry white wine
- 8 cups low-sodium beef broth
- 4 slices of baguette
- 4 slices of Gruyere cheese
Instructions:
I. Preparation
- Thinly slice the onions and mince the garlic.
- Preheat the crock pot on the high setting.
II. Cooking the Onions
- In a large skillet, heat the butter and olive oil over medium heat.
- Add the sliced onions, minced garlic, dried thyme, salt, and black pepper to the skillet.
- Cook the onions, stirring occasionally, until they are caramelized, about 25-30 minutes.
III. Adding the Broth and Wine
- Transfer the caramelized onions to the crock pot.
- Add the beef broth and white wine to the crock pot.
- Stir to combine.
IV. Cooking the Soup
- Cover the crock pot and cook on high for 4 hours or on low for 6-8 hours.
V. Toasting the Bread
- Preheat the oven to 400°F.
- Place the slices of baguette on a baking sheet.
- Toast the bread for 10-12 minutes, or until golden brown.
VI. Assembly
- Ladle the hot soup into oven-safe bowls.
- Place a slice of toasted baguette on top of each bowl of soup.
- Place a slice of Gruyere cheese on top of each slice of bread.
VII. Broiling the Soup
- Place the bowls of soup on a baking sheet.
- Broil the soup for 3-5 minutes, or until the cheese is melted and bubbly.
