easy carrot cake recipe


 

Here is a simple and delicious recipe for carrot cake:

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup raisins (optional)
  • 1 cup chopped pecans or walnuts (optional)

For the cream cheese frosting:

  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, beat the sugar and oil together until well combined. Beat in the eggs, one at a time.
  4. Stir in the grated carrots and optional raisins and nuts.
  5. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  6. Pour the batter evenly into the prepared pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center of the cakes comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then remove them from the pans and let them cool completely on a wire rack.
  9. To make the frosting, beat the cream cheese and butter together until creamy. Gradually add the powdered sugar and vanilla extract and beat until smooth.
  10. Place one cake layer on a serving plate and spread a generous amount of frosting on top. Repeat with the second cake layer and the remaining frosting.
  11. Decorate the top and sides of the cake with additional frosting, if desired.
  12. Serve and enjoy!
