Here is a simple and delicious recipe for carrot cake:
Ingredients:
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon salt
- 1 cup granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- 3 cups grated carrots
- 1 cup raisins (optional)
- 1 cup chopped pecans or walnuts (optional)
For the cream cheese frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 tsp vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- In a large bowl, beat the sugar and oil together until well combined. Beat in the eggs, one at a time.
- Stir in the grated carrots and optional raisins and nuts.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined.
- Pour the batter evenly into the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted in the center of the cakes comes out clean.
- Let the cakes cool in the pans for 10 minutes, then remove them from the pans and let them cool completely on a wire rack.
- To make the frosting, beat the cream cheese and butter together until creamy. Gradually add the powdered sugar and vanilla extract and beat until smooth.
- Place one cake layer on a serving plate and spread a generous amount of frosting on top. Repeat with the second cake layer and the remaining frosting.
- Decorate the top and sides of the cake with additional frosting, if desired.
