Here is a unique biryani recipe that you can try at home:
Ingredients:
- 1 cup basmati rice
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 cup mixed vegetables (carrots, beans, peas, etc.)
- 1 teaspoon ginger paste
- 1 teaspoon garlic paste
- 1 teaspoon green chili paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 1/2 cup yogurt
- 2 tablespoons ghee or oil
- Fresh coriander leaves for garnish
- Saffron strands (optional)
- Lemon juice (optional)
Instructions:
- Rinse the basmati rice in plenty of water and soak for 30 minutes.
- In a large saucepan, heat the ghee or oil and add the cumin seeds. When they start to crackle, add the chopped onion and cook until golden brown.
- Add the ginger paste, garlic paste, green chili paste, and cook for a minute.
- Add the chopped tomatoes and cook until soft.
- Add the mixed vegetables, coriander powder, garam masala, turmeric powder, red chili powder, and salt. Cook for 2-3 minutes.
- Drain the rice and add it to the saucepan. Mix well with the vegetables.
- Add 2 cups of water and bring to a boil. Reduce the heat, cover, and cook for 10-15 minutes or until the rice is cooked and the water has been absorbed.
- In a separate pan, heat 1/2 cup of yogurt until it starts to boil. Remove from heat and add a pinch of saffron strands (optional) and lemon juice (optional).
- Spread half of the cooked rice in a large serving dish. Pour the heated yogurt over the rice. Cover with the remaining rice.
- Garnish with fresh coriander leaves and serve hot with raita or chutney.
