Recipe: Eggs Benedict

Ingredients:

1. 4 English muffins, split and toasted

2. 8 slices of Canadian bacon or ham

3. 8 eggs

4. 1/2 cup unsalted butter

5. 3 egg yolks

6. 1 tablespoon lemon juice

7. 1/4 teaspoon salt

8. 1/8 teaspoon cayenne pepper

9. 1 tablespoon chopped fresh parsley

Cooking time: 30 minutes

Directions:

1. Preheat oven to 375°F.

2. In a large skillet, fry the Canadian bacon or ham over medium-high heat until lightly browned. Set aside.

3. Fill a large saucepan with about 2 inches of water and bring to a simmer. Crack an egg into a small cup or ramekin. Gently slide the egg into the water and repeat with the remaining eggs. Cook for about 3-4 minutes or until the whites are set and the yolks are still runny.

4. In a small saucepan, melt the butter over low heat.

5. In a blender, combine the egg yolks, lemon juice, salt, and cayenne pepper. Blend for about 5 seconds.

6. With the blender still running, slowly pour in the melted butter. Blend for about 30 seconds or until the mixture has thickened and is smooth.

7. To assemble the Eggs Benedict, place a toasted English muffin half on a plate. Top with a slice of Canadian bacon or ham and a poached egg. Spoon the hollandaise sauce over the top. Sprinkle with chopped parsley.
