mexican street corn recipe with canned corn


 Mexican Street Corn Recipe:

Ingredients:

1. 4 ears of fresh corn

2. 1/4 cup mayonnaise

3. 1/4 cup sour cream

4. 1/2 cup crumbled cotija cheese

5. 1/2 teaspoon chili powder

6. 1/4 teaspoon smoked paprika

7. 1/4 teaspoon garlic powder

8. Salt and pepper to taste

9. Lime wedges, for serving

Instructions:

1. Preheat the grill to medium-high heat (around 375-400°F).

2. Husk the corn and remove any silk.

3. Grill the corn for about 10-12 minutes, rotating it occasionally until it is cooked and lightly charred in spots.

4. While the corn is grilling, prepare the sauce. In a small bowl, mix together the mayonnaise, sour cream, 1/4 cup of the cotija cheese, chili powder, smoked paprika, garlic powder, and salt and pepper to taste.

5. When the corn is done, remove it from the grill and let it cool slightly.

6. Brush the corn with the sauce, making sure to coat each ear evenly.

7. Sprinkle the remaining 1/4 cup of cotija cheese over the top of the corn.

8. Serve the corn with lime wedges on the side.
