Here's a recipe for Pasta con Salmone (Pasta with Salmon)
Ingredients:
- 1 lb spaghetti
- 1 lb skinless salmon fillet, cut into bite-sized pieces
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup white wine
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup chopped fresh parsley
- Grated Parmesan cheese for serving
Instructions:
I. Cooking the Pasta
- Bring a large pot of salted water to a boil.
- Cook the spaghetti according to the package instructions until al dente.
- Reserve 1 cup of the pasta water.
- Drain the pasta and set aside.
II. Sautéing the Salmon and Garlic
- In a large skillet, heat 2 tablespoons of the olive oil over medium heat.
- Add the salmon pieces and cook until golden brown, about 3-4 minutes on each side.
- Remove the salmon from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of olive oil and the minced garlic.
- Cook the garlic until fragrant, about 1-2 minutes.
III. Making the Sauce
- Add the white wine to the skillet and bring to a simmer.
- Cook until the wine has reduced by half, about 2-3 minutes.
- Stir in the heavy cream, salt, black pepper, and red pepper flakes.
- Cook until the sauce has thickened, about 5-7 minutes.
- Stir in the lemon juice and chopped parsley.
IV. Assembly
- Add the cooked pasta to the skillet with the sauce.
- Toss to evenly coat the pasta with the sauce.
- If the pasta seems too dry, add some of the reserved pasta water, a little at a time, until the desired consistency is achieved.
- Add the cooked salmon pieces to the skillet.
- Toss gently to combine.
V. Serving
- Serve the Pasta con Salmone hot, topped with grated Parmesan cheese. Enjoy!
