pasta con salmone


 Here's a recipe for Pasta con Salmone (Pasta with Salmon)

Ingredients:

  • 1 lb spaghetti
  • 1 lb skinless salmon fillet, cut into bite-sized pieces
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup white wine
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup chopped fresh parsley
  • Grated Parmesan cheese for serving

Instructions:

I. Cooking the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook the spaghetti according to the package instructions until al dente.
  3. Reserve 1 cup of the pasta water.
  4. Drain the pasta and set aside.

II. Sautéing the Salmon and Garlic

  1. In a large skillet, heat 2 tablespoons of the olive oil over medium heat.
  2. Add the salmon pieces and cook until golden brown, about 3-4 minutes on each side.
  3. Remove the salmon from the skillet and set aside.
  4. In the same skillet, add the remaining 2 tablespoons of olive oil and the minced garlic.
  5. Cook the garlic until fragrant, about 1-2 minutes.

III. Making the Sauce

  1. Add the white wine to the skillet and bring to a simmer.
  2. Cook until the wine has reduced by half, about 2-3 minutes.
  3. Stir in the heavy cream, salt, black pepper, and red pepper flakes.
  4. Cook until the sauce has thickened, about 5-7 minutes.
  5. Stir in the lemon juice and chopped parsley.

IV. Assembly

  1. Add the cooked pasta to the skillet with the sauce.
  2. Toss to evenly coat the pasta with the sauce.
  3. If the pasta seems too dry, add some of the reserved pasta water, a little at a time, until the desired consistency is achieved.
  4. Add the cooked salmon pieces to the skillet.
  5. Toss gently to combine.

V. Serving

  1. Serve the Pasta con Salmone hot, topped with grated Parmesan cheese. Enjoy!
