Sushi rice recipe:

 Ingredients:

1. 2 cups of short-grain sushi rice

2. 2 cups of water

3. 1/4 cup of rice vinegar

4. 2 tablespoons of sugar

4. 1 teaspoon of salt

Instructions:

1. Rinse the rice: Rinse the sushi rice in a fine-mesh strainer under cold running water until the water runs clear.

2. Soak the rice: In a medium-sized pot, combine the rinsed rice with 2 cups of water and let it soak for 30 minutes.

3. Bring to a boil: After soaking, bring the pot of rice and water to a boil over high heat.

4. Reduce heat and simmer: Reduce the heat to low, cover the pot with a tight-fitting lid, and let the rice simmer for 15-20 minutes, or until all the water has been absorbed.

5. Let it rest: After cooking, remove the pot from the heat and let it rest, covered, for 10-15 minutes.

6. Prepare the vinegar mixture: In a small bowl, mix together the rice vinegar, sugar, and salt until the sugar and salt are completely dissolved.
