Miso soup recipe:

 Ingredients:

1. 4 cups dashi (or chicken or vegetable broth)

2. 3 tablespoons miso paste

3. 1 block tofu, diced

4. 2 green onions, sliced

5. 1 sheet nori (dried seaweed), torn into small pieces

6. 1 tablespoon soy sauce

7. 1 tablespoon mirin

8. 1 tablespoon sake (optional)

Cooking Time and Temperature:

1. In a medium pot, bring the dashi to a gentle simmer over medium heat. If using chicken or vegetable broth, bring it to a boil and then reduce the heat to a simmer.

2. Add the diced tofu and torn nori to the pot.

3. In a small bowl, whisk together the miso paste, soy sauce, mirin, and sake (if using) until smooth.

4. Add the miso mixture to the pot and stir to combine.

5. Cook the soup for 5-7 minutes, until the tofu is heated through and the flavors have melded together.

6. Ladle the soup into bowls and sprinkle with sliced green onions.

Note: The cooking temperature for this recipe is medium heat. If using chicken or vegetable broth, bring it to a boil and then reduce the heat to a simmer. The cooking time for the soup is 5-7 minutes, or until the tofu is heated through and the flavors have melded together. Avoid boiling the miso soup after adding the miso paste to prevent it from becoming grainy.
