vegan poke bowl recipe
Ingredients:
For the Rice:
1. 2 cups sushi rice
2. 2 cups water
3. 2 tablespoons rice vinegar
4. 2 tablespoons sugar
5. 1 teaspoon salt
For the Sauce:
1. 1/4 cup soy sauce
2. 2 tablespoons honey
3. 2 tablespoons sesame oil
4. 1 tablespoon rice vinegar
5. 1 teaspoon sriracha
6. 1/2 teaspoon garlic powder
7. 1/2 teaspoon onion powder
For the Bowl:
1. 1 pound sushi-grade ahi tuna, diced
2. 1 avocado, diced
3. 1 cup shelled edamame
4. 1 cup sliced cucumber
5. 1/4 cup thinly sliced green onion
6. 2 tablespoons sesame seeds
Instructions:
1. Rinse the sushi rice several times until the water runs clear. Combine rice and water in a rice cooker or pot and cook according to the instructions.
2. In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 30 seconds, stirring occasionally until sugar dissolves. Drizzle the mixture over the cooked rice and stir to combine.
